An Eggs-traordinary Easter Treat

Alexia got to have a play date with a super cute friend of hers named Maddy.  Since her mommy had made some delicious cookies with the girls the previous week, I decided to have the girls also help with a treat to share in return.

I had seen various versions of treats that were 'nests with eggs inside.'  So I decide to try it out.  

 First I put the bottom part of plastic eggs on a cookie tray, lined with parchment paper.  Then, just in case I would have 'sticking issues' on the eggs, I sprayed them lightly with a nonstick cooking spray.

 Next, I made up a batch of 'no bake cookies.'  You may ask, what in the world?  Isn't Adelaide allergic to peanut butter?  Why, yes, she is!  That is why we use our favorite substitute of soy butter.  I know, I know, it sounds YUCK, but it is surprisingly tasty.  After they had cooled quite a bit, I formed them over the egg bottoms.

 After they had cooled completely, the girls helped to pick them off the tray and put them on their plates right side up.

 They took the plastic eggs out with ease,...

and then finished them off, taking turns picking out eggs (jelly beans in our case) to place in their nests. We made sure each girl had nests for their bests;o) ... a.k.a. each of their family members.

It turned out to be fun!  Adelaide liked getting it enough that she deemed it worthy enough to write about in her school journal, and believe me that bar is much higher than I'd like it to be, which has caused more than a few arguments between the two of us!
